Storage Tips
Always store fresh mushrooms in a plain, brown paper bag in the refrigerator, placing them in the bottom crispers may help slightly extend shelf life.

Cooking Tips
Mushrooms may be shed apart starting from the cap and pulled like string cheese. Whole mushrooms may also be used depending on preference.
A cast iron skillet is recommended on a medium high heat. No oils should be in the pan. 'Dry cook' the mushrooms without oils and uncovered for 5-10mins to sweat out the moisture from the mushrooms.
Once a desired color has developed, place oil in the skillet along with garlic, onions and your favorite seasonings, finish cooking for a few more minutes then serve!

Selection Tips
Blue Oysters offer the most meaty texture with a great balanced Umami, pick this one for meat substitutes like pulled pork!
Italian Browns offer the most flavor, the strongest Umami! Pick this mushroom if your goal is to enhance the flavor with mushrooms!
King Trumpet has the most robust texture, great for vegan scallops, bacon, calamari and a more dense textured pulled pork
Gold Oysters have a great floral note and clean texture when raw, pick this one for salads!
They also have a cashew like flavor when cooked, awesome to add more depth to a mix mushroom recipe!
Chestnut mushrooms have a deep woody and nutty flavor, AMAZING in stir frys and noodles!
Lions Mane is great for its dense meaty texture as a vegan steak or crab or lobster recipes!
I prefer to mix them all together, their flavors and textures work together to build a great depth to any meal!
