The Swiss Army Knife of the mushrooms, Blue Oyster is the primary oyster variety of choice when it comes to cooking. Balanced but rich Umami and meaty texture, blue oysters shred easy into pulled pork or shredded chicken, or work them in to amp up the savoryness of any traditional button mushroom recipe

OUT OF THIS WORLD CULINARY MUSHROOM

While not always best emulating meat like blue oyster, Gold Oyster zeros in on flavor and aroma by offering additional cashew like notes in flavor and floral notes in aroma. Gold Oysters are a favorite to many for their unique flavor. Best roasted, Gold Oysters crisp the easiest! Gold Oysters are best used within days as they have the shortest shelf life.

MOST SAVORY CULINARY MUSHROOM

This is my personal favorite oyster, Italian Browns, also called Phoenix Oyster offer the most savory flavor of all the oysters we grow on our farm. More tender than Blue Oysters, but not as delicate as Gold Oyster. Italian Browns make the most tender and savory pulled pork and offer the most flavor for any mushroom broth!
